Easy Salad for a Busy Week

I love to keep my pantry stocked with simple staples when I can. I realize that is definitely not available to everyone. Whether you have financial constraints or space constraints, sometimes having a pantry full of food (or even having a pantry) is not possible.

This is why I love reusing ingredients throughout the week. We have definitely established some staples in our home. We love to have tomatoes and a green like spinach or arugula. These can help to create a salad, bulk up a sandwich , or get thrown in a sauce. We are a big beans and rice family but we like to put a spin on what kind of beans and what kind of grains we use. While I know quinoa is a SEED, I treat it like a grain!

The short vide below shows one of my favorite side dishes (or main dishes depending on what you like) that helps me use my staples in a way that is yummy and efficient.

Ingredients 

• chickpeas/garbanzo beans

• Quinoa

• Tomatoes

• Red onion

• Kalamata olives

• Arugula

• Zaatar seasoning

• Garlic powder

• Maybe feta

• Mix and add a olive oil and lemon or a vinaigrette 

The amount of servings will depend on the amount of ingredients you want to include. 

This can easily be turned into a wrap by using a tortilla or lavash. The garbanzo beans and quinoa pack in some protein on their own, however, it can be turned into more of main dish with added protein options like tofu, chicken, or fish. I hope you enjoy it!
